Dear Portland,
Tomorrow I'm going to attempt to make chocolate meringues (cookies). I don't have any cream of tartar so I will either walk to the store, or use lemon juice (which I do have). I've read that using a liquid acid as a substitute can really mess up a recipe because of of the liquid content (cream of tartar is powder). But I think because these are very simple cookies I will be able to watch the reaction and figure out what I need to fix the problem before it gets out of hand. There aren't a lot of ingredients or steps so I can keep a close eye on things. I have never made meringue of any kind and I've heard it's hard but I don't really believe it. Maybe I am being over confident, maybe not. I have read a bunch of different recipes tonight that have different techniques and I'm pretty confident I will be fine.
We will find out tomorrow.
